Veggie Tuna Salad

I like my tuna with A LOT of vegetables to accompany it. When I say salad, I mean salad. Tons of flavor, tons of color and tons of crunch. Zucchini, radish, celery, carrots, pickles, olives and onions. First let’s start with the tuna: what kind of tuna to use? You can use any, whatever your go to canned tuna is. My personal favorite is Fishwife’s Smoked Albacore Tuna, the quality is superb, the texture is perfect and the flavor is out of this world with a smoky flare. It is worth every cent. Once you’ve got your tuna of choice, the rest is a breeze: chop and mix. I love my tuna salad full of flavor and light on mayo, with lettuce and a brioche bun, but you can make any sandwich or melt you please. There are a million different tuna salad recipes out there, so I thought I’d share our household favorite. It is a great thing to meal prep for the week, as it gets better as the days go by. Keep for up to a week in the refrigerator.
