Blue Corn & Honey Butter Cookies (Gluten Free!)

While exploring the country and discovering my favorite flavors, blue corn is definitely one to remember. With the grainy-ness of cornmeal and the warming flavors of the southwest, do not underestimate these gluten free sweets. This New Mexican inspired cookie is not only a great alternative for out gluten free friends, but it provides variety and brings new flavors to the table. Grainy chewy southwestern sunshine in a cookie.


The secret to making these cookies is keeping them moist. While writing this recipe it took me a few attempts to get the consistency right. Cornmeal is dry, but that’s where the honey butter comes in! Honey brings the gooey sweet texture we all know and love and it brings the cornmeal into a tasty chewy balance.
