Brie, Anchovy and Golden Berry Crostini

My husband and I love a good tin fish date night. Our goal for the night is to find a combination on the board that makes ‘the perfect bite’. The night I made this combination, it became an instant staple for us. The combination of flavors and textures is everything. Creamy, salty, fruity, tangy and crunchy all in one bite. This bite has it all. Diverse flavor representation with a combination of texture that just makes your mouth happy. Not only are they delicious, but they couldn’t be easier to make- there is no prep besides the assembly. I love to serve these as an appetizer when we have company, add them to a cheese board as an already grab-able bite. Sometimes I make a plate of it just for myself for lunch when I work from home.
I use whatever crackers I have in the house but my favorites to use are crostini, rosemary crackers or fruit and seed based crackers. The ease of this appetizer is that there is no prep, so use what you have in the house and keep it easy. This recipe is flexible. If you have anchovies in your cupboard or you love a good tin fish date night as much as we do- this is a must try bite. Once covid hit, I shifted a lot of my charcuterie board displays into grab-able bites to avoid everyone touching the same items. So many wonderful appetizer bites came out of this period, and this one is definitely one I add to my repertoire when I host. If you haven’t had a golden berry yet, they are a gift of life and you should immediately drive to Whole Foods or Trader Joes as they usually have them in stock. The warhead of fruits. Sour, tart, tangy, fruity and an all around power-punch of flavor. For my cheese choice, I usually try to find a locally made brie or camembert to use, a lot of times I end up looking through Whole Foods local cheese section to find something fun and different to try. For my anchovies, I usually end up using Sclafani as we almost always have them in the pantry. If I have anchovies from the always wonderful Fishwife Tinned Seafood Co., those are always my personal favorite!
